We have an OfficeSuite eFax number that was initially set up using my office suite user. I have changed it to a different user and modified the fax address but I am still receiving notifications when a fax is sent to this number.

Based on what you have stated, I am assuming that when you say you modified the "fax address", you mean that you revised the email address on the fax line. If not, then I would suggest you try changing the fax email address. If you have already tried that then I would suggest you contact our support team at 1-888-623-8647 for further troubleshooting.
